Plumcot Farro Salad

In a small saucepan, stir together water and sugar for simple syrup. Heat syrup on medium heat until simmering. Remove from heat and add in 1/3 of the sliced nectarines. Cover pot with a lid and steep syrup for 30 minutes. Drain syrup with a colander and set aside.
In a large pitcher, stir together simple syrup, flat water and lemon juice. Top lemonade with sparkling water and white nectarine slices. Do not add ice to the pitcher as it will water down the lemonade batch. Serve in glasses filled with ice.
