Aprium Pistachio Oat Bars



For bars

1 1/2 cups of all-purpose flour
1/4 cup of chopped pistachios
1/2 cup of oats
1/2 cup of granulated sugar
1/2 tsp. of baking powder
1 tsp. of lemon zest
pinch of kosher salt
1 egg
1/2 cup of butter, cold

For filling

1 cup of granulated sugar
1/4 cup of all-purpose flour
2 lemons, squeezed & strained
3 eggs
zest of one lemon
3 tbsp. of milk or cream
1/4 tsp. of salt
1/2 tsp. of cinnamon
4-5 apriums, halved
powdered sugar (optional)


Step 1

Preheat oven to 375℉. Grease and line a 8×8 pan with parchment paper and set aside.

Step 2

In a large mixing bowl, combine flour, sugar, pistachios, oats, baking powder, lemon zest, and salt. With a grater, grate stick of cold butter into flour mixture. Add in one egg. With your hands or a pastry blender, combine dough mixture until crumbly. Pat the dough evenly into the greased and parchment-lined pan and set aside.

Step 3

For Filling: In a large mixing bowl, whisk together sugar, flour, cinnamon, lemon juice and zest, milk, and salt. Whisk in three eggs. Pour mixture over pressed dough. Place halved apriums evenly into filling.

Step 4

Bake 40 to 45 minutes or until the middle no longer jiggles. Let cool 20 to 30 minutes. If desired, top with sifted powdered sugar and serve.
