Plumcot Farro Salad
In a large Dutch oven add steel cut oats and almond milk. Stir together and heat on medium high heat until mixture has come to a boil. Reduce heat to low and simmer for 15 minutes, stirring occasionally.
After 15 minutes, add in vanilla bean seeds, chopped pecans, plumcots, unsalted butter, cinnamon and 1/4 cup of honey if desired. Stir together, top with extra plumcots and serve immediately.
