Vanilla Bean & Plumcot Pecan Oatmeal

Ingredients:

2 cups of steel cut oats
6 cups of almond milk
1 vanilla bean, scraped with seeds
3/4 cup of pecans, chopped
2 tsp. of cinnamon
2 tbsp. of unsalted butter
1/4 cup of honey
2 plumcots, diced & more for topping

Steps:

Step 1

In a large Dutch oven add steel cut oats and almond milk. Stir together over medium high heat until mixture has come to a boil. Reduce heat to low and simmer for 15 minutes, stirring occasionally.

Step 2

After 15 minutes, add in vanilla bean seeds, chopped pecans, plumcots, unsalted butter, cinnamon, and 1/4 cup of honey if desired. Stir together, top with extra plumcots and serve immediately.
