Vanilla Bean & Plumcot Pecan Oatmeal



2 cups steel cut oats
6 cups almond milk
1 vanilla bean pod, scraped with seeds
3/4 cup pecans, chopped
2 tsp. cinnamon
2 tbsp. unsalted butter
1/4 cup honey
2 plumcots, diced & more for topping


Step 1

In a large Dutch oven add steel cut oats and almond milk. Stir together and heat on medium high heat until mixture has come to a boil. Reduce heat to low and simmer for 15 minutes, stirring occasionally.

Step 2

After 15 minutes, add in vanilla bean seeds, chopped pecans, plumcots, unsalted butter, cinnamon, and 1/4 cup of honey if desired. Stir together, top with extra plumcots and serve immediately.
