Preheat oven to 200°F.
Place apple slices in a large bowl and toss with cinnamon and sugar.
Line a baking sheet with parchment paper and arrange slices in a single layer.
Bake for 2–3 hours, flipping halfway through, until lightly crisp around the edges.
Let cool completely before storing in an airtight container.
