Sno-Mandarin Radicchio Salad

Ingredients:

Vinaigrette

1 Sno-Mandarin, juiced
3 anchovy fillets
1 tsp. dijon mustard
2 Tbsp. rice vinegar
⅓ cup extra virgin olive oil

Salad

1 head radicchio, roughly chopped
2 Sno-Mandarins, segmented

Topping

¼ cup sunflower seeds, toasted
Parmesan cheese, shaved

Steps:

In a small bowl, mash anchovies into a paste.

Add mandarin juice, dijon mustard, and vinegar. Slowly whisk in olive oil until emulsified.

Place chopped radicchio in a large bowl and add mandarin segments. Toss gently with vinaigrette until lightly coated.

Plate the salad. Sprinkle with toasted sunflower seeds.
Shave Parmesan over the top using a vegetable peeler.

Serve and enjoy!
