Plumcot Farro Salad

Preheat the oven to 350°F.
Place mandarin juice and segments in a small saucepan over medium heat. Add rice vinegar, soy sauce, sesame oil, and sesame seeds. Simmer gently until slightly reduced and thickened. Set aside.
Place salmon on a baking sheet. Coat lightly with olive oil and sprinkle with salt.
Bake for 12–15 minutes, until just cooked through.
Transfer salmon to serving plates. Spoon glaze over the top. Garnish with a drizzle of extra virgin olive oil, parsley leaves, and chopped Sno-Mandarin segments.
