Plumcot Farro Salad

Preheat oven to 350°F. Using parchment, line a 9″ round cake pan.
Whisk together flour, baking powder, baking soda, and orange zest.
With an electric mixer, beat vegetable oil and sugar until fully mixed. Then add in eggs one at a time.
Fold in dry mixture and add satsuma juice to the electric mixer bowl. Mix until combined.
Pour mixture into the cake pan. Smooth top of the batter using a spatula.
Bake at 350°F for about 30 to 40 minutes. You can check if the center is cooked by inserting a toothpick into the cake, once it can be removed clean, the cake is done.
For the frosting: fold in the mascarpone cheese and vanilla in the whipped cream. Once the cake has completely cooled, cover it with frosting.
Optional: Use any extra satsumas and satsuma zest to decorate the cake!
