Plum Cherry Butter



4 lbs plum cherry plumcots, halved & pits removed
1 1/2 to 2 cups maple syrup


Step 1

Puree the plumcots in a blender or food processor and pour them into a large pot.

Step 2

Add in 1 1/2 cups of maple syrup and stir well. Bring to a boil and then reduce heat to keep the mixture at a steady simmer. Allow to simmer for 45 to 60 minutes, stirring every 10 minutes.

Step 3

Place a teaspoon of  the mixture onto a plate and place in the refrigerator for 5 minutes. If the mixture becomes thick, it is ready to remove from the heat.

Step 4

You can test the butter for sweetness and add extra maple syrup to taste. If you choose to add in more, simmer until the mixture thickens again.
