Plumcot Farro Salad

Preheat oven to 375°F. Line a baking sheet with parchment.
For the Cookies: In a medium bowl, cream butter and sugars. Mix in the egg and then add in vanilla.
In a separate bowl combine flour, baking soda, salt, and cinnamon. Add this to the creamed mixture. Finally add in quick oats to the mixture.
Scoop cookie dough and place 2” apart onto the cookie sheet.
Bake for 8 minutes, allow cookies to cool before forming sandwiches.
Slice donut peaches in half and discard each pit.
Layer two oatmeal cookies on each side of the peach.
Top cookie off with a large scoop of vanilla bean ice cream. Squish the peach/oatmeal cookie sandwich together and serve immediately.
