Blueberry Panna Cotta Parfait

Ingredients:

Gelatin

2 cups of blueberries, fresh
3 tsp. of unflavored gelatin
6 tbsp. of water
1/2 cup of granulated sugar

Panna Cotta

1 cup of whole milk
1 tbsp. of unflavored powdered gelatin
3 cups of heavy whipping cream
1/3 cup of honey
1 tbsp. of granulated sugar

Steps:

Step 1

Begin by making the blueberry gelatin. Mix unflavored gelatin with the water.

Step 2

Add blueberries and sugar to a saucepan and bring to a simmer. Once all of the sugar has dissolved, add the gelatin and water mixter to the pan.

Step 3

Remove pan from heat and pour the mixture into 6 small glass jars, refrigerate for 2 hours.

Step 4

Once your gelatin has set, begin making the panna cotta layer. In a medium bowl, evenly sprinkle gelatin over the milk. Place this bowl into the refrigerator and let stand for about 5 minutes.

Step 5

Pour the milk and gelatin mixture into a saucepan over medium heat. Heat the mixture, but do not bring to boil.

Step 6

Add heavy whipping cream, honey, and sugar to the saucepan. Heat this mixture, but do not bring to a boil. Stir occasionally and make sure all ingredients have dissolved together.

Step 7

Remove from heat and allow to cool to room temperature. Then pour mixture into your 6 glass jars over the blueberry gelatin layer.

Step 8

Refrigerate overnight before enjoying.
