Blueberry & Mango Salsa
INGREDIENTS
2 cups blueberries
1 ripe mango, peeled and finely chopped (about 1 cup)
1/4 cup finely chopped red onion
1/4 cup fresh lime juice
1 jalapeno, seeded and finely chopped
2 tbsp chopped cilantro or parsley
1 tsp honey
1/4 tsp salt
Prep Time: 10 minutes Cook Time: 0 minutes Serves: Makes 3 cups
Stir blueberries with mango, red onion, lime juice, jalapeno, cilantro, honey and salt. Let stand for 10 minutes before serving.
Tip: Substitute peaches for the mango if desired.
