In a medium bowl whisk together chia seeds, 2 tablespoons of honey, vanilla extract and almond milk until combined. Place in the refrigerator overnight. Stir mixture.
Evenly distribute a layer of greek yogurt, granola, honey, blueberries, and chia pudding into three separate glasses. Top the parfait with more blueberries and a drizzle of honey if desired.
