Green Plumcot Vinaigrette

Ingredients:

2 large green plumcots – pit removed but skin still attached
1/4 cup rice wine vinegar or vinegar of choice
1 tbs of honey
1 tsp of Dijon or whole grain mustard
3/4 cup neutral oil
Pinch of salt

Steps:

Step 1

Place all ingredients into a blender besides the oil and Blend.

Step 2

Slowly drizzle in the oil until emulsified.

Step 3

Pour in a serving vessel.

Step 4

Keep refrigerated.
