Blackberry Cookie Sandwich

Ingredients:

Cookie

1/2 cup butter, salted
3/4 cup sugar
1 1/4 flour
1/2 tsp. baking soda
1/4 tsp. salt
3 tbsp. milk
1 cup quick oats

Filling

2 cups blackberries
1/2 cup shortening
1/2 cup butter
1/2 tsp. vanilla extract
3 cups powdered sugar

Steps:

Preheat oven to 350 degrees.

In a saucepan, heat blackberries over high heat and stir occasionally until softened and reduce. Allow to cool for 20 minutes.

In a stand mixer, whip butter until smooth. Then add in granulated sugar. Mix until well combined.

In a separate bowl, add flour, baking soda, and salt. Slowly add into the butter mixture and beat until well combined.

Using a spatula, fold in the milk and oats.

Roll a tablespoon of the batter mixture into a ball and place them 2 inches appart on a baking sheet. Flatten each cookie into even round and bake for 10 minutes.

While cookies are baking, in your stand mixer combined shortening, butter, and vanilla until smooth. Slowly add in powdered sugar and cooked blackberries.

Allow cookies to cool completely. Then pipe and spread the filling into each cookie sandwhich.
