Apricot & Ricotta Arugula Pizza



1 pre-made pizza dough
1/4 cup olive oil + more for drizzling
4 garlic cloves, minced
1 cup ricotta cheese
Salt & pepper to taste
2 cups arugula
desired amount prosciutto & apricot slices on top


Step 1

Preheat oven to 450°F.

Step 2

On a pizza stone or baking sheet (lined with parchment), roll out pizza dough.

Step 3

In a small bowl whisk together minced garlic and olive oil. Brush this mixture from edge to edge on pizza dough.

Step 4

Spread out an even layer of ricotta and season with salt and pepper. Arrange prosciutto and apricot slices evenly over pizza dough. Drizzle with a bit more olive oil and bake for 10-12 minutes or until the pizza edges are golden brown.

Step 5

Top with two handfuls of fresh arugula and serve.
