Plumcot Farro Salad

In a small saucepan, combined soy sauce, honey, mustard, & garlic and bring to a boil.
Reduce heat & let simmer for 10 minutes until sauce has thickened. Remove from heat.
Skewer apricots & diced chicken.
Brush both sides of the skewer with vegetable oil and sprinkle with salt & pepper.
In a large pan over medium heat, warm a small amount of olive oil.
Place skewers on pan & cook 5–6 minutes each side.
The last 2 minutes of cooking, brush the skewers with the honey and soy sauce glaze.
Remove from heat and sprinkle with chopped cilantro.
