Apricot Cobbler

Ingredients:

For filling

1 cup sugar
4 cups apricots, sliced
1 tbsp. lemon juice
1 tsp. vanilla extract
Ground cinnamon or nutmeg (optional)

For topping

1 cup all-purpose flour
1 tbsp. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
3 tbsp. cold butter
1/2 cup whole milk

Steps:

Step 1

Preheat oven to 400°F.

Step 2

In a medium sauce pan combine apricot slices, sugar, vanilla, cinnamon and lemon juice on a medium heat. Bring mixture to a boil and then stir for 1-2 minutes until mixture is thickened.

Step 3

Remove from heat and set aside. Pour apricot mixture evenly into a greased 9×13 casserole dish.

Step 4

For topping: In a large bowl combine flour, sugar, baking powder and salt.

Step 5

Dice up the butter and mix into dough with your hands until crumbly. Stir in ilk until batter is moist.

Step 6

Spoon batter dollops evenly over apricot mixture. Bake for 30 minutes or until mixture is bubbly and batter tops are golden brown.
