Plumcot Farro Salad
Preheat oven to 400°F.
In a medium saucepan combine apricot slices, sugar, vanilla, cinnamon, and lemon juice on a medium heat. Bring mixture to a boil and then stir for 1-2 minutes until mixture is thickened.
Remove from heat and set aside. Pour apricot mixture evenly into a greased 9×13 pan.
For topping: In a large bowl combine flour, sugar, baking powder and salt.
Dice up the butter and add it to the flour mixture, mixture should be crumbly. Stir in milk until batter is moist.
Spoon batter evenly over apricot mixture. Bake for 30 minutes or until mixture is bubbly and batter tops are golden brown.
