Apricot Caprese Salad
8-10 Slices of mozzarella cheese
3 Family Tree Farms® apricots
1 Cup of fresh basil leaves
Salt + Pepper
Optional: Serve with balsamic drizzle
1 Cup of balsamic vinegar
Serves 4 as a side dish
On a large platter arrange alternating rows of mozzarella cheese, apricot slices and basil leaves. Season the top with salt and pepper. Drizzle with olive oil. Serve on the side or drizzle on top a balsamic mixture.
For balsamic drizzle: In a small saucepan heat balsamic vinegar on high until boiling. Reduce heat down to low and let simmer for about 20 minutes or until mixture begins to thicken enough to coat the back of a spoon. Remove from heat and let cool for 15 minutes before serving.
