Apricot Caprese Salad



8-10 slices of fresh mozzarella cheese
3 apricots
1 cup of fresh basil leaves
olive oil
salt & pepper
1 cup of balsamic vinegar


Step 1

On a large platter, arrange alternating rows of mozzarella cheese, apricot slices, and basil leaves. Season the top with salt and pepper and drizzle with olive oil.

Step 2

For balsamic drizzle: In a small saucepan, heat balsamic vinegar on high until boiling. Reduce heat down to low and let simmer for about 20 minutes or until mixture begins to thicken. Remove from heat and let cool for 15 minutes before serving. Serve on the side or drizzle a balsamic mixture on top.
