Not Your Ordinary Mousse!

Ingredients:

2 cups fresh blackberries
1/4 cup granulated sugar
1 tbsp. lemon juice
1 tsp. vanilla extrat
1 cup heavy whipping cream
1/4 cup powdered sugar

Steps:

Step 1

In a small saucepan, add blackberries, granulated sugar, and lemon juice. Cook over medium heat for 10 minutes, stir occasionally. Blackberries should become soft and break down.

Step 2

Using a fine mesh strainer, pour and press compote to extract as much of the juice mixture as possible. You can discard the seeds and allow puree to cool to room temperature.

Step 3

While your puree is cooling, in a large mixing bowl combine cold heavy whipping cream, powdered sugar, and vanilla extract. Whip until stiff peaks form.

Step 4

Gently fold in the cooled puree until fully combined.

Step 5

Pipe the mousse into dessert cups, refrigerate for 2 hours, and enjoy!
