Whipped Goat Cheese and Cherry Crostini
8-10 Slices of seedy bread or french baguette
8 ounces of goat cheese
2 Tablespoons of whipped cream cheese
1 Teaspoon of salt
1 1/2 Cups of cherries, pitted and halved
1 Tablespoon of olive oil
1 Teaspoons of fresh thyme sprigs
Juice of one lemon
2 Tablespoons of honey
Lightly toast bread slices in a toaster or in the oven at 375 F for 6-8 minutes.
In a food processor or with a stand mixer whip together goat cheese and cream cheese until creamy. Stir in salt to taste.
In a small bowl mix together cherries, olive oil, thyme sprigs, lemon juice and honey.
Spread whipped cream cheese over bread slices and top with 1-2 tablespoons of fresh cherry mixture.
