Vanilla Bean Plum Pecan Steel Cut Oatmeal
2 Cups of steel cut oats
6 Cups of almond milk (or nut milk of your choice)
1 Vanilla bean pod, scraped with seeds
3/4 Cup of chopped pecans
1-2 Teaspoons of cinnamon
2 Tablespoons of unsalted butter
1/4 Cup of honey (optional)
2 Family Tree Farms® plums, diced + more for topping
In a large dutch oven add steel cut oats and almond milk. Stir together and heat on medium high heat until mixture has come to a boil. Reduce heat to low and simmer for 15 minutes, stirring occasionally.
After 15 minutes, add in vanilla bean seeds, chopped pecans, unsalted butter, cinnamon, and 1/4 cup of honey if desired. Stir together, top with extra plums and serve immediately.
