Grilled White Peaches Stuffed with Mascarpone Cheese
1/3 cup 35% whipping cream
1/2 cup mascarpone cheese
2 tbsp icing sugar
1 tsp vanilla
4 white peaches, halved and pitted
2 tbsp honey
1/2 cup crushed hazelnut biscotti or amaretti cookies
4 mint leaves (optional)

Whip cream until stiff peaks form and hold when beaters are lifted. Fold in mascarpone, icing sugar and vanilla gently until combined; cover and refrigerate.
Meanwhile, preheat grill to medium heat; clean and grease grate well. Grill peaches, cut side down for 3 to 5 minutes or until grill-marked; transfer to indirect heat and cook until fork-tender. Let cool slightly.
Place 2 peach halves on each plate. Divide mascarpone mixture evenly among peaches. Drizzle with honey and sprinkle with crushed biscotti. Garnish with mint (if using).
Tip: Place cookies in a large zip-top bag and crush with a rolling pin for mess-free preparation.
