Caramelized Onion Goat Cheese Fig Flatbread
INGREDIENTS
1 Large baked flatbread
2 Yellow onions, thinly sliced
¼ Cup of unsalted butter
6 Ounces of goat cheese crumbles
10-12 Figs
1 Tablespoon of honey
Salt + Pepper
Rosemary Sprigs
Preheat oven to 400 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
In a large sauté pan, heat butter on medium low heat until melted. Add in thinly sliced onions and cook on medium low for 3-40 minutes. Stir the onions occasionally until they have all browned and are tender. Adding in 1-2 tablespoons of sugar can help quicken the caramelizing process.
Place flatbread onto a baking sheet lined with parchment paper. Scoop out the insides of half the figs (depending on how big your flatbread is) and evenly spread them out onto the flatbread. Drizzle an even layer of honey onto the figs, a pinch of salt and pepper and add on caramelized onions. Sprinkle with goat cheese pieces and bake for 10-12 minutes or until goat cheese is melty.
Remove from oven and quarter the remainder of the figs. Top with quartered figs and rosemary sprigs.
