Caramelized Onion Goat Cheese Fig Flatbread



1 large flatbread, baked
2 yellow onions, thinly sliced
1/4 cup unsalted butter
6 ounces of goat cheese crumbles
10-12 figs
1 tbsp. honey
Salt & pepper
Rosemary sprigs


Step 1

Preheat oven to 400℉. Line a baking sheet with parchment paper and set aside.

Step 2

In a large sauté pan, heat butter on medium low heat until melted. Add in thinly sliced onions and cook on medium low for 30-40 minutes. Stir the onions occasionally until they have all browned and are tender.

Step 3

Place flatbread onto a baking sheet lined with parchment paper. Scoop out the insides of half the figs and evenly spread them out onto the flatbread.

Step 4

Drizzle an even layer of honey onto the figs, a pinch of salt and pepper and add on caramelized onions. Sprinkle with goat cheese pieces and bake for 10-12 minutes or until goat cheese starts to melt.

Step 5

Remove from oven and quarter the remainder of the figs. Top with quartered figs and rosemary sprigs.
