Apricot Cobbler

Ingredients:

For filling

1 cup of granulated sugar
4 cups of apricots, sliced
1 tbsp. of lemon juice
1 tsp. of vanilla extract
ground cinnamon or nutmeg (optional)

For topping

1 cup of all-purpose flour
1 tbsp. of granulated sugar
1 1/2 tsp. of baking powder
1/2 tsp. of salt
3 tbsp. of butter, cold & cubed
1/2 cup of whole milk

Steps:

Step 1

Preheat oven to 400°F.

Step 2

In a medium saucepan combine apricot slices, sugar, vanilla, cinnamon, and lemon juice over medium heat. Bring mixture to a boil and then stir for 1-2 minutes until mixture is thickened.

Step 3

Remove from heat and set aside. Pour apricot mixture evenly into a greased 9×13 pan.

Step 4

For topping: In a large bowl combine flour, sugar, baking powder, and salt.

Step 5

Mix butter into the flour mixture, mixture should be crumbly. Stir in milk until batter is moist.

Step 6

Spoon batter evenly over apricot mixture. Bake for 30 minutes or until mixture is bubbly and batter tops are golden brown.
