1 Cup sugar
4 Cups fresh sliced apricots
1 Tablespoon of lemon juice
1 Teaspoon of vanilla extract
Ground cinnamon or nutmeg (optional)
1 Cup of all purpose flour
1 Tablespoon of sugar
1 1/2 Teaspoons of baking powder
1/2 Teaspoon of salt
3 Tablespoons of cold butter
1/2 Cup of whole milk
In a medium sauce pan combine apricot slices, sugar, vanilla, cinnamon and lemon juice on a medium heat. Bring mixture to a boil and then stir for 1-2 minutes until mixture is thickened. Remove from heat and set aside.
Preheat oven to 400 F.
Pour apricot mixture evenly into a greased 9 x 13 casserole dish.
For topping: In a large bowl combine flour, sugar, baking powder and salt. Dice up the butter and mix into dough with your hands until crumbly / sandy. Stir in milk until batter is moist. Spoon batter dollops evenly over apricot mixture.
Bake for 30 minutes or until mixture is bubbly and batter tops are golden brown.
