Aprium Feta Pistachio Salad

Ingredients

  • 3 tbsp extra-virgin olive oil
  • 1 tbsp white wine vinegar
  • 1/2 tsp lemon zest
  • 2 tsp lemon juice
  • 1 tsp honey
  • 1/4 tsp salt
  • Pinch cayenne pepper (optional)
  • 8 apriums, pitted and sliced
  • 3 tbsp chopped fresh mint
  • 4 cups baby arugula
  • 1/3 cup crumbled feta cheese
  • 2 tbsp pistachios

Direction

  • Whisk together oil, vinegar, lemon zest, lemon juice, honey, salt, and cayenne (if using).
  • Toss apriums with vinaigrette; stir in mint. Place arugula on serving dish and top with apriums. Garnish with feta and pistachios.
